This PR makes appropriate documentation improvements:
- Removes version-specific reference (cis.md): Removes "v1.8.0" from CIS Docker Benchmark reference, making the documentation timeless
- Removes outdated tool requirement (cves.md): Removes note about Docker Scout CLI 1.18.3 requirement (now 6+ months old)
- Improves timeless writing (sscs.md): Changes "rise in sophisticated cyberattacks" → "sophisticated cyberattacks" and "have underscored" → "underscore" to follow STYLE.md guidelines
All changes align with the style guide's emphasis on timeless writing and removing dated content.
No issues found in the changed code.

Some minor wording changes.
Removed the note about required minimum Scout version as that version is now over 6 months old.
